3 c. organic cherry tomatoes (chopped small)
1 c. organic green, red & yel…low peppers, (chopped small)
2 med. organic cucumbers, peeled, (seeded & chopped small)
1 jalapeno pepper, (seeded & chopped small)
1 sm. Vidalia onion, (chopped small)
1 clove garlic, minced
4 Tbsp. lime juice
1 tsp. fresh parsley, minced
DIRECTIONS: Mix all ingredients together in a large bowl & refrigerate until serving (Eating Well).
